Rotolo’s Pizzeria, the growing Louisiana-based Italian restaurant chain, opens its 33rd location at 100 East Bayou Road in Thibodaux, La., on August 21th.
The Thibodaux restaurant is the 27th location in Louisiana and the sixth restaurant to open in the last seven months. The restaurant’s concept — Italian cuisine made from fresh, local ingredients in a casual, family-friendly atmosphere — has been the key to the continued growth.
“There is a need for sit-down dining options in downtown Thibodaux,” said owner and operator Marcel Fournier. “The menu items, pizza and other Italian staples made with a Louisiana flair, will appeal to local customers.”
Fournier isn’t a stranger to the Rotolo’s Pizzeria chain. He opened a location in Houma two years ago. He believes that the success of that restaurant will be duplicated in Thibodaux.
“The people of Thibodaux should expect a great dining experience. We make our dough fresh daily and use only homemade sauces. All of our ingredients are purchased from local sources,” said Fournier.
The location is an additional attraction. The 103-year-old building, originally built as a rail depot, has a refurbished interior that preserves the structure’s exterior characteristics. Outdoor seating facing the Intracoastal Waterway adds a bonus element to the dining experience.
“We opened up 8,000 square feet within the building,” said Fournier, who designed the interior himself. “We wanted to retain as much of the original features while providing a comfortable setting.”
The refurbished building not only provides an attractive dining environment, but it also improves the downtown environment. Mitch Rotolo, the restaurant chain’s founder and CEO, said that making a positive community impact is a core principle of his business.
“We’re open to helping local groups with fundraising or community events,” Rotolo said. “It’s important to us to have a connection to a community beyond just providing quality service and great dining experience.”
Nicholls State University athletics will be a prominent theme throughout the restaurant. In addition to the decor, the restaurant will use NSU-themed souvenir cups featuring the football schedule during the season. The Rotolo’s cups are a popular item at all the chain’s locations because of their collect-ability and seasonal designs.
