Rotolo’s Pizzeria, a growing family-dining chain with locations in Louisiana, Texas, Alabama, and Florida, has named Glen Armantrout as its first chief operating officer.
In his role as COO, Armantrout will oversee the day-to-day operations with an eye on maximizing efficiency. He will also direct strategic planning and facilitate communication between departments, external resource providers, and franchisees. Armantrout will report directly to Mitch Rotolo, Founder and CEO.
A veteran of the New Orleans restaurant scene, Armantrout brings over thirty years of food service experience to Rotolo’s. As the COO of Acme Oyster House, he oversaw the transformation of that New Orleans’ legend into a growing restaurant chain known throughout the world.
Armantrout’s leadership abilities have also benefited the local restaurant industry. He has served as a board member for the Louisiana Restaurant Association (LRA) since 1994 and has lobbied the United States Congress on the association’s behalf. In 2009, Armantrout served as the LRA state president.

Rotolo’s Pizzeria, which currently operates 31 locations, is poised for expansion into key markets in Texas. Additional locations within Louisiana are also in the pipeline for 2017. The growth is fueled by the success of the Rotolo’s chain. The average unit volume and profitability for each franchisee increased over the last two years.
